Avocado and white chocolate mousse with dried apricot and Navaho Blackberry.

Ingredients

+3/4 Cup White Chocolate Baking Chips
+1 Cup Whole Milk
+2 hass avocados
+2 teaspoons vanilla extract
+2 Tablespoons maple syrup
+Mint Leaves for garnish
+Dried apricot
+Navaho Blackberry

Step 1
Combine avocado, milk, vanilla extract, and maple syrup in a food processor and puree until smooth.

Step 2
Melt white chocolate in a double boiler. Set aside to cool. You can also melt chocolate in a microwave 20 seconds at a time stirring in between.

Step 3
Combine pureed ingredients and melted white chocolate. Pour mixture into serving glasses and chill in the refrigerator for about 4 hours. Garnish with fresh mint leaves.
